Quince and cider vinegar dressing

There is no doubt that in recent times we have forgotten how fantastic some of our traditional fruit and veg are, for example greengages, lovage, sloes, beetroot countless varieties of apples and pears, meddlers and the mighty quince. The quince is an amazing fruit with a rich and heaveny perfumed aroma and a taste to match. Well I decided that it was time the good old English quince was introduced to a wider audience, so I created my creamy Quince and cider vinegar dressing.

It has a subtle, sweet tang that makes it an ideal partner for Trout, Salmon or white fish and is also brilliant with Indian food, in-fact it is just brilliant full stop! So let your imagination run wild, you will not regret it.

Ingredients: Rapeseed oil ( 45% ), concentrated quince juice ( 15% ), water, cider vinegar( 11% ), sugar, honey, prepared English mustard ( water, mustard flour, salt, wheatflour, turmeric ), parsley, garlic puree, salt, stabilizer xanthan gum, ground black pepper
