A fresh vibrant salad, packed with flavour.

Ingredients
- 200g mixed salad leaves
- 1 small cucumber
- 100g small tomatoes
- 2 tablespoons of black olives
- half of a small red onion
- 1 teaspoon of fresh oregano leaves
- 50g feta cheese
Dressing
- 2 tablespoons of Fussels Extra Virgin Rapeseed Oil
- 1 tablespoon of Fussels Garlic Rapeseed Oil
- 2 tablespoons of white wine vinegar
- 1/4 teaspoon of salt
- 1/4 teaspoon of dried oregano
- 1/4 teaspoon of freshly ground black pepper
Method
Slice the onion thinly; cut the cucumber into half and then slice. Cut the tomatoes into bite size chunks (if they are small, halves will do) and slice the olives into neat circles.
Combine the salad ingredients in a large bowl.
Crumble the feta over the top.
Whisk together the dressing ingredients and pour over the salad.
