- A whole gutted trout
- 2 limes
- lemon thyme
- fussels smoked rapeseed oil
- a cubed ripe avocado
- small diced red onion
- fussels watercress dressing
Lay 1 whole trout (gutted) on a lined baking tray. Stuff the cavity with slices of lime, fresh coriander and lemon thyme, and season well with salt and pepper.
Drizzle with a little Fussels smoked rapeseed oil and put in a pre-heated oven at 200C for 15-20 mins to bake.
Finely dice 1 small red onion and 1 ripe avocado and combine in a bowl along with the juice and zest of half a lime. Stir through 1-2 tbsp of Fussels Peppered watercress dressing and season to taste.
Remove the trout from the oven and dress with the salsa. Serve with a watercress salad.
