A healthy meal packed with flavour that is so easy to do.
- Fussels rapeseed oil, garlic or original
- Salt and pepper
- 1 courgette
- 1 small aubergine
- 1 red onion
- 1 red pepper
- 1 packet of couscous, approx. 250g
- Handful fresh coriander
- 3 - 4 tbsp Fussels English herb dressing
- Feta cheese
Slice, lightly oil and season the courgette, aubergine, red onion and pepper. Chargrill on a BBQ or hot griddle pan until charred.
Cook the couscous according to packet instructions. Once ready, stir through a handful of roughly chopped coriander and add the dressing and seasoning.
Combine the couscous with the chargrilled vegetables and spoon into a large bowl. Top with crumbled feta cheese and some more roughly chopped coriander.
