There is nothing better than perfect roast potatoes, and these will be so good they will be the star of the meal.
- 8 tbsp rapeseed oil
- 1.5kg fluffy potatoes cut into 5cm chunks
- 3 sprigs rosemary
Preheat oven to 200°C/Gas 6. Put oil into a large roasting tin in the oven to heat up. Put potatoes into a pan of cold water with a generous pinch of salt and bring to the boil.
Simmer for 8 - 10 mins or until the potatoes are partially cooked and still holding form. Drain the water, rumble the potatoes in the colander and allow to steam dry for a couple of minutes.
Carefully add the potatoes to the oil and sprinkle over salt and pepper. Roast for 1hr, shaking the potatoes a couple of times during cooking and adding the rosemary for the last 15 minutes of cooking.
