Perfect Roast Potatoes

Ingredients

  • 50ml rapeseed oil
  • 8 Maris Piper or King Edward potatoes
  • Salt

Method

  • Peel and quarter the potatoes
  • Preheat the oven 220C
  • Add the oil into an oven dish that can contain all the potatoes and pop into the oven
  • Boil the potatoes in salted water for 8 minutes
  • Drain the potatoes and shake vigorously in the colander to roughen the edges (this will help them to crisp up in the oven)
  • Carefully pour the potatoes into the hot oil, shake gently and return to the oven
  • Turn the oven down to 190C and bake for 50 minutes, turning a couple of times durning that time
  • Serve sprinkled with a little more salt
